Ingredients
- 1 lb chicken breast, cut into 1-inch cubes
- 3 tbsp Arlotta Roasted Red Pepper Spread
- 2 tbsp Arlotta Hot Pepper olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and pepper to taste
- Wooden skewers (soaked in water for 30 minutes if using wooden)
Instructions
- In a large bowl, mix together Arlotta Roasted Red Pepper Spread, Arlotta Hot Pepper olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper.
- Add the chicken cubes to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto the skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
- Serve hot with a side of rice or salad.
