Ingerdients:
- About 1 lb. radishes
- 1 tablespoon of our organic lemon olive oil
- 1 tablespoon our balsamic vinegar
- Salt and pepper, to taste
- 1 tablespoon minced fresh parsley, for garnish (optional)
Instructions:
- Preheat the oven to 425 degrees Fahrenheit.
- If needed, trim the tops of the radishes and wash them thoroughly. Cut all the radishes in half lengthwise.
- In a bowl, toss the radishes with our olive oil, our balsamic vinegar, salt, and pepper until evenly coated.
- Arrange the radishes in a single layer, cut side down, in a large cast iron skillet or on a rimmed baking sheet.
- Roast in the preheated oven for 15 minutes, then flip the radishes over. Continue roasting for another 10-20 minutes, or until they are fork-tender and golden brown.
- Check for seasoning and adjust if necessary.
- Garnish with minced fresh parsley before serving, if desired. Enjoy hot!
