Truffle Mustard Lamb Burgers

Ingredients
- 1lb of lean lamb mince OR ground beef

2 tsp of black truffle mustard

2 tsp of salt

Brioche rolls
Directions
Step 1
Mix all three ingredients, refrigerate for at least 30 mins.
Step 2
Remove from fridge and form into 4 x ¼ lb patties.
Step 3
Rest in the fridge again for 30 minutes (the closer they are to fridge temperature the more evenly they will cook).
Step 4
Lay onto a medium hot griddle or frying pan ensuring not to overcrowd the pan. Cook for two minutes each side and repeat until the juices run clear from the burger.
Step 5
Serve in a brioche roll & add more truffle mustard on top!
