Picante Roasted Tomato Pesto
While traditional pesto is made from crushed basil, pine nuts, garlic, olive oil, and Parmesan cheese, the ingredients can vary. In Italian, Pesto means to "pound" or to "crush".
So here is a wonderful alternative: "Crushed" fire-roasted tomatoes with extra virgin olive oil, garlic, Calabrian hot peppers, sea salt, and oregano.
