Suze's Blueberry Thyme Crepes

Ingredients
Crepes:
- 1/2 cup of milk
- 3/4 cups of water
- 1 tsp vanilla
- 1 cup of flour
Topping:
Instructions
- Whisk milk, water and vanilla together in a medium bowl; add flour in increments whisking vigorously in between until smooth.
- Heat buttered nonstick pan over medium-low heat. using 1/4 cup measure, scoop batter and pour onto pan, for each crepe, in a circular motion tilting pan so that the batter coats the pan evenly.
- Cook until underside is slightly browned, about 2 minutes. Flip the crepe and lightly brown the other side, about 1 minute.
- Transfer each crepe to a serving plate.
- Stir together Plain Greek Yogurt and Arlotta Blueberry Lemon Thyme Jam.
- On each crepe, spread a thin layer of the jam and fold.
- top with a dollop of yogurt/jam mixture.
